Crisp potato chips topped with melted cheese, nacho sauce, veggies, and ground beef is a nacho combination that everyone loves. Potato Chip Nachos could also be called “the best nachos you’ve ever made in your life!” Make this with Homemade Potato Chips and homemade White Cheddar-Jack Nacho Sauce! Homemade is always better.

Baking this beauty only takes about 10 minutes so the shredded cheese fully melts. The secret to amazing nachos is layering them like a lasagna. I did two layers. I feel that if the nachos are one layer, there isn’t much to it. If you choose to make the chips and cheese sauce from scratch, it’ll take you about 30 minutes extra. However, it is totally your choice to use bagged chips and store-bought nacho sauce.

You can make this into skillet nachos!

All you need is a cast-iron skillet. Just layer the nachos like you normally would and bake them right in the cast iron. Its presentation also looks better in my opinion.

Can I make this with regular tortilla chips?

Of course, you can! I used homemade potato chips because I love the crisp crunch of potato chips along with the salt factor.

What are the best toppings for nachos?

Toppings for nachos can run the gamut of your imagination, but I prefer to keep them classic. My recipe has taco seasoned ground beef. I wish I had used black beans too! I used mild cheddar to melt over the nachos. If you want that stringy-gooey cheese, you have to grate it yourself. My grocery store didn’t have any blocks so I bought pre-shredded. Pre-shredded cheese is coated with an anti-caking powder that prevents it from melting to its gooiest potential. Pico de gallo (store-bought or fresh), guacamole, sour cream, sliced jalapeños, diced onions and tomatoes, and fresh cilantro are classic fresh nachos toppings to sprinkle over top. I chose jalapenos, tomatoes, and orange bell peppers for color.

Potato Chip Nachos

Crisp potato chips topped with melted cheese, nacho sauce, veggies, and ground beef is a nacho combination that everyone loves. Potato Chip Nachos could also be called “the best nachos you’ve ever made in your life!”

Ingredients

  • 8 ounces potato chips (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 2 tbsp water
  • 1 1/2 tbsp taco seasoning
  • 2 cups nacho cheese sauce (homemade or store-bought), plus more for drizzle
  • 8 oz mild cheddar cheese, shredded
  • 3 jalapenos, finely diced
  • 1 tomato, diced
  • 1 orange bell pepper, diced
  • 2 tbsp fresh cilantro, chopped finely

Instructions

  1. Preheat the oven to 400°F.
  2. In a medium saute pan, heat with 1 tbsp olive oil on medium-high heat. Add the ground beef and cook for 10 minutes, or until the meat is cooked through. Drain the meat, then place back into the pan with 2 tbsp water. Add 1 tbsp of taco seasoning and mix to combine. Turn the heat off and set it aside.
  3. Spread half of the potato chips across a small sheet pan. Top evenly with the shredded cheese, ground beef, and nacho cheese. Repeat with one more layer.
  4. Bake for 8-10 minutes until the cheese has melted.
  5. Remove the hot pan from the oven and drizzle with nacho cheese. Sprinkle the remaining taco seasoning. Top with the jalapenos, tomatoes, orange bell pepper, and garnish with cilantro. Serve immediately. Enjoy!
